Crumbed Tofu + Pineapple Relish

I cant take credit for making this one... It was all Nicole's doing. She used to make me this RAD Crumbed Chicken + Tomato Relish on a bed of rice, so this is our Vego Spin on that.

Same tofu as before, diced and crumbed.

The Relish consisted of Corn, Onions, Diced Tomato and Pineapple Pieces... perfect for a hot summer night... not that their has been too many this summer.

And fried the tofu in a big pot, with oil...

Nicole liked her Tofu stacked up like a wall (or a 'Fort' as she refered to it), to eat separate to the rice. I preferred mine on top, and eventually doused in Soy Sauce + a chinese Hot Sauce.


It worked out a treat, and one i look forward to making again.

Scrambled Tofu Burritos + Hash Browns

Im not Vegan, but these just turned out this way... I've never done scrambled tofu before, and i just lucked my way through it. The tofu i bought worked perfect, because when i broke it up by hand, and kinda rubbed it from the block with my thumbs, it came out with perfect scrambled egg consistency.

Here's what i used:


I shredded the potato, and only mixed in salt/pepper/hot sauce... that's whats in the big white bowl.



I went with small button mushrooms... not sure why... something different i guess.
Hash browns cooking away in the back ground. I just threw the whole lot into the pan, and let it cook as one big pile of goodness... but alas, it broke up as i flipped it.


My Pug/Jack Russel + Kitchen Hand - Chuck. I let him test out the food as we cook, to make sure its all good.

The pinkness of the hash browns is from the hotsauce... Note to self: Hot Sauce gets ALOT hotter once you cook with it.

Thanx to Cupcake Kitteh, i found a grocery right near my work that sells some next level imported mexican food.

Country Growers has heaps of Salsa, Hot Sauce and Beans, as well as a HUGE international food selection.

Heres some products i use, most of which you can get from there.
This Salsa is PERFECT for Burritos. It claims that its pretty hot... but Hot is objective... so i put more Hot Sauce in it...
El Yucateco's Red Habanero Hot Sauce - its pretty darn warm, and pretty darn tasty.

Why?

So, the plan was to get Viva Vegan, and have a crack at alot of the recipes in it, but since ive been flat out, and have hardly had a chance to read it, and i was keeeeen to get this going, i decided i'd stick with what i know, and see how it goes.

I decided to eat a vegetarian diet on July 22nd, 2010. I was in NYC with Nicole, and all that week i'd seen this clip on tv:

and it a really weird way, it resonated with me.
I havent seen the whole movie, and doubt i ever will, but it was just the straw that broke the camels back.

I'm not the first, and i hope i'm not the last.

Mock Crumbed Chicken Burritos

I eat Mad Mex... ALOT... my Death Row meal would be a burrito, a bottle of tapatio and a side of guac and corn chips.

So this is my version of what Mad Mex do, but with a mock chicken which they dont do... Its just as good w/out the chicken, but this particular time i ran with it.

Instead of listing ingredients, i decided i'd just take a photo...

Two pans... Crumbed chicken in one, onions and capsicum in the other. The Crumbing i used (which i didnt take a photo of) was this Old El Paso Spicy Crumbing or something, which works really well.



Tapatio is in my top 2 hot sauces in existence... (the other being Gringo Bandito) So, even though i put some on pre-wrapping the burrito, i still had a bottle by my side, incase i didn't initially put enough on.


Spinach & Sundried Tomato Pasta

An old boss who loved cooking gave me this recipie… its WAY easy, and is really really REALLY cheap to make for dinner or as a side dish with something else.

Ingredients:

  • Baby Spinach Leaves (4 handfulls)
  • Small Tub of Sun-dried tomatoes
  • Small Packet of Pasta
  • ‘Cooking Cream’
  • Garlic

I bought this rad little blender from somewhere, and im stoaked when ever i get a chance to use it.

Basically…throw all the stuff in there, and mix it til you’re content with the consistancy…

Another thing to do, which i didnt do this time, but isnt a bad idea, is getting pine nuts, and cooking them up, and throwing them on top for a bit of honest crunch.
